In this post, you will find the recipe for dumpling hash with egg for one person. If you are making it for multiple people, just double, triple, etc., the amount.
This easy recipe for leftover dumplings also works with potato dumplings or Tyrolean dumplings and with dumplings from the freezer (defrost beforehand). Serve with a green or mixed salad.

For the recipe, you will need the following ingredients (for 1 person):
- 1 bread dumpling (can also be from the previous day or a few days old)
- 2 eggs
- 1 tablespoon fat (e.g., clarified butter, oil)
- Salt
- Pepper
- Chives

Step 1
Cut the bread dumpling into cubes and fry them in fat until crispy.
Step 2
Crack the eggs into a bowl, add salt, and beat them. Pour over the dumplings.
Step 3
Cover the pan with a lid and let the egg set to the desired firmness at a low temperature. If you don't have a fitting lid, it can be done without one. Serve sprinkled with pepper and chives. A green or mixed salad goes well with it.
