In this article, you'll find a traditional family recipe for Baked Rice Pudding. To make this nostalgic Austrian childhood dessert at home, you cook some rice in milk. The rice is then mixed with butter, sugar, egg yolks, lemon, vanilla, beaten eggwhites and optionally some raisins. Before baking in the oven, sliced apples are added.
You can also make baked rice pudding if you have leftover rice pudding from the previous day.

You will need the following ingredients for the recipe:
For cooking the rice:
- 4 cups of milk - also works well with oat milk, almond milk, soy milk, etc.
- Pinch of salt
- 2 tablespoons of butter or margarine
- 1 cup of rice - I used short-grain rice, but wild rice, brown rice, or similar are also possible. The cooking time may be extended.
For the pudding:
- 4 tablespoons of butter or margarine - can also be reduced to about 3 tablespoons
- ⅓ cup powdered sugar - can also be reduced to about ¼ cup
- 1 packet vanilla sugar - alternatively, use vanilla extract, vanilla powder, etc.
- Juice from ½ lemon
- Lemon zest from 1 lemon (optional, also very good with orange zest)
- 3 eggs
- 2 tablespoons raisins (optional)
- 1 pound apples - You can also use other fruits and berries instead of apples. Fresh, frozen, or canned fruits (drained, if necessary) work, so the pudding doesn't get too watery.
For greasing the dish:
- About 1 teaspoon of butter or margarine
- 1-2 tablespoons breadcrumbs
Instructions
Here is a detailed step-by-step guide with pictures.
Lightly salt the milk, add butter or margarine, bring to a boil, and then cook the rice until tender. Let it cool.
Separate the eggs. Beat the egg whites into stiff peaks using a mixer.
Preheat the oven to 160°C (320°F) convection.
Beat butter, sugar, vanilla sugar, lemon juice and grated lemon zest with the egg yolks.
Mix the cooked rice, raisins, and egg yolk mixture. Carefully fold in the beaten egg whites.
Grease a casserole dish with butter or margarine and sprinkle with breadcrumbs.
Peel and core the apples. Cut them into slices.
Pour half of the rice mixture into the tin. Top with apples and pour the second half of the rice mixture over the top, smooth down.
Cover and bake in a preheated oven at 160°C (320°F) for approx. 60 minutes. (Some ovens require up to 180°C/360°F).
Serve sprinkled with powdered sugar.
For some of you, raspberry syrup is a must with this recipe! Sometimes canned peaches or other fruits are also popular instead of apples.

- 4 medium sized apples

- 1 tbsp. butter/margarine
- 1 tbsp. breadcrumbs
Anleitung
- Add a little salt to the milk, add the butter/thea, bring to the boil, then cook the rice until soft. Leave to cool.Separate the eggs. Beat the egg whites with a mixer until stiff. Beat the butter, sugar, vanilla sugar, lemon juice and zest with the egg yolks until fluffy. Mix into the cooled rice mixture. Then fold in the beaten egg whites and raisins.Grease the baking dish and sprinkle with breadcrumbs. Peel the apples and cut into thin slices.Pour half of the rice mixture into the dish.
