Quick and easy recipe for Austrian Pork Sausage Salad with cheese, red onion, cucumber, bell peppers and apple.
My grandfather had three things that he had mastered incredibly great in the kitchen. One of his recipes was the following one for a very delicious pork sausage salad.
While my grandmother with her 88 years still is all day in the kitchen, spreads her personal creative chaos and prepares schnitzel, apricot dumplings, pies and many more as if she would work at the assembly line in a factory, my grandfather had, in his structured and orderly manner, specialized in the following three recipes:
- Incredibly good coffee
Every day, my grandfather had his coffee beans freshly grounded, and prepared his espresso in an old Italian hand espresso machine and then served it with milk, sugar and a pinch of cocoa. - Sour Sausage
May sound strange, but is a very delicious and traditional Austrian dish.
The recipe included some sausage with vinegar and onions - and was really yummy! - Wurstsalat

The special thing about this recipe for sausage salad is that an apple is included. This gives the salad an interesting sweet note. Also, the pumpkin seed oil provides a special taste experience - who does not have pumpkin seed oil at hand, can replace it with another oil for example corn oil, canola oil or olive oil.
As a side dish, I recommend a good dark bread, for example, this recipe for homemade spelt bread.

Pork Sausage Salad
Zutaten
- 9 oz pork sausage {250g}
- 5 oz Gouda or other cheese
- 1 apple
- 1 onion
- 2 tbsp. marjoram
- ½ cucumber
- 1 green pepper
- 1 red pepper
- salt
- pepper
- 1 dash pumpkin seed oil or other corn oil, canola oil or olive oil
- 1 dash apple vinegar or other vinegar
- pickles (cucumbers)
- 1-2 tbsp. mustard
Anleitung
- Wash cucumber, peppers and applw and chop into small pieces (about 1x1 cm).
- Cut small sausage and sheese (about 1x1 cm).
- In the salad bowl, mix vinegar with about ¼ cup of water {75 ml} and mustard and add marjoram, salt and pepper.
- Mix all of the ingredients in the salad bowl, eventually add more of the oil.
