Cooked parsnips are not my favorite, but I love them raw in a salad! Here is the recipe for a quick and easy carrot and parsnip salad.
Parsnips and carrots are the perfect combination for a fresh and healthy winter salad. Their sweet, nutty flavor harmonizes wonderfully and brings variety to the plate. A delicious parsnip and carrot salad can be prepared with just a few ingredients and in a short space of time, making it a great side dish or light meal.

Ingredients
For 1 portion as a side dish
- 1 large parsnip
- 1 large carrot
- 1 teaspoon honey (alternatively Oxymel instead of honey and vinegar)
- 2 tablespoon apple cider vinegar
- 2 tablespoon olive oil
- 1 teaspoon parsley, chopped
Instructions
- Dissolve the honey in the vinegar. Mix with olive oil.
- Wash and grate the parsnips and carrots, mix with the dressing. Serve sprinkled with parsley.
Good to know
If you make more of the dressing and add cooked lentils, you have a quick, cheap and healthy lunch with this recipe.
The salad will keep in the fridge for 2-3 days, making this recipe a perfect meal prep salad!
