Here is a recipe for simple sweet Austrian semolina dumplings with stewed berries and golden brown roasted bread crumbs.
Ingredients
For the dumplings
125 g coarse semolina flour
250 ml milk
20 g butter
pinch of salt
2 eggs
50 g flour
For the breadcrumbs
20 g butter
100 g breadcrumbs
20 g sugar optional
For the berries
Strawberries, raspberries, blackberries, blueberries in season (frozen or fresh) to taste
50 g sugar optional
Dumpling instructions
Bring the milk to the boil with a pinch of salt and the butter, the butter should melt. Mix with the semolina. Some types of semolina need to simmer in the milk for a few minutes, some other types form a thick porridge immediately.
Leave to cool and knead with the egg and flour. Cover and leave to stand for 30 minutes. Form approx. 16 small dumplings and boil in salted water for 12 minutes. Strain and roll in the butter crumbs. Serve with roasted berries or seasonal fruit
Instructions for breadcrumbs
Melt the butter in a pan and fry the breadcrumbs over a medium heat, stirring constantly, until golden brown.
Stewed Berries instructions
Simmer approx. 1 handful of berries per person with a little water and optionally a little sugar or other sweetener (honey etc.) in a pan for 5 minutes.
