You wouldn't believe how good potato goulash tastes! The vegan potato goulash recipe is quick and easy and costs just €0.65 per portion (as of 2024).
To make the goulash really creamy, I dusted the sautéed onions with a little flour. For an extra umami taste, it's very important to add a few spoons of bright vinegar.
With ingredients from a Viennese supermarket, this vegan dish costs 65 cents per portion. Together with a loaf of rye bread it comes to 1 euro 4 cents, with sausages to around 2 euros. (as of June 2024)
Ingredients
150 g onion, peeled and finely diced
3 cloves garlic peeled and pressed
600 g potato peeled and roughly diced
1 teaspoon of whole caraway seeds
paprika powder
600 ml vegetable soup
30 ml vinegar 3 tbsp
20 g flour 2 tbsp
30 g oil 3 tbsp
Instructions
Sautee the onion in a pan with the oil. Add the garlic. Fry the caraway seeds and paprika powder for a few seconds while stirring. Add the flour, stir until well combined and pour in the vegetable soup. Add the vinegar and potatoes.
Cook until the potatoes are very soft. This will take 20-45 minutes, depending on the variety and size of the pieces. Stir frequently so that nothing burns to the bottom of the pot. If necessary, add a little more water or soup so that the potatoes are covered while cooking.
