This delicious winter salad is an easy variation of the classic Waldorf salad, featuring raw celery root, apple, natural yogurt, and walnuts. It keeps well for 1–2 days in the fridge, making it perfect for preparing a day in advance for festive occasions.
Ingredients

- 600 g (1.3 lbs) celery root
- 2 apples
- 250 g (1 cup) natural yogurt
- 1 handful of walnuts, roughly chopped
- Apple cider vinegar
- Honey
- Walnut oil or olive oil
- Salt
- Pepper
Instructions
- Peel the celery root and grate it into thin sticks. Slice or grate the apples into thin strips.
- Prepare a dressing using the natural joghurt and apple cider vinegar, honey, and oil to taste. Season with salt and pepper.
- Toss the celery and apple with the dressing, and sprinkle with walnuts before serving.
