Semolina dumplings with stewed berries

Zutaten

Dumplings

  • 125 g coarse semolina flour
  • 250 ml milk
  • 20 g butter
  • pinch of salt
  • 2 eggs
  • 50 g flour

Breadcrumbs

  • 20 g butter
  • 100 g breadcrumbs unflavored
  • 20 g sugar optional

Stewed Berries

  • 300 g strawberries or raspberries, blackberries, blueberries in season (frozen or fresh)
  • 50 g sugar optional

Anleitung

Dumplings

  • Bring the milk to the boil with a pinch of salt and the butter, the butter should melt. Add the semolina and cook on low heat until a thick porridge is formed. Leave to cool and knead with the egg and flour. Cover and leave to stand for 30 minutes. Form approx. 16 small dumplings and boil in salted water for 12 minutes. Strain and roll in the butter crumbs. Serve with roasted berries or seasonal fruit

Bread Crumbs

  • Melt the butter in a pan and fry the breadcrumbs over a medium heat, stirring constantly, until golden brown.

Stewed Berries

  • Simmer approx. 1 handful of berries per person with a little water and optionally a little sugar or other sweetener (honey etc.) in a pan for 5 minutes.
