Simple Sorrel Soup

Sorrel leaves taste quite sour, as the name suggests. Cooked in the soup, they develop a pleasant aroma reminiscent of sour cream.
Portionen 4 portions

Zutaten

  • 1 onion alternatively leek
  • 2 large potatoes
  • 1 bunch of sorrel from the garden, farmers' market, or also available in garden shops
  • 750 ml vegetable broth
  • dash of cream optional
  • 1 tablespoon butter
  • Pepper
  • Salt

Anleitung

  • Peel and dice the onion. Heat butter in a pot and sauté the onion until translucent. Pour in the vegetable broth or water and soup seasoning and bring to a boil..
  • In the meantime, wash and chop the sorrel.
  • Peel the potatoes and cut into small cubes (about 1 cm). Add sorrel and potatoes to the pot and let simmer for about 15 minutes until the potatoes are soft.
  • Puree with an immersion blender, optionally refine with cream, season with pepper and salt.
